RECIPE: Rosemary Mashed Potatoes and Cauliflower

 

For me, mashed potatoes on Thanksgiving are a must. The mountain of carbohydrates that come along with them? Not so much. Thankfully, I found this lower-carb alternative from Bowl of Delicious and adapted it to my liking—and everyone else’s at the table! 

Directions:

STEP 1: 

Place potatoes, cauliflower florets, vegetable broth, and salt to taste in a large pot with rosemary sprig on top. 

STEP 2:

Bring to a boil, cover, and simmer for 20 minutes or until potatoes are fork-tender. 

STEP 3:

Remove pot from heat and discard rosemary sprig. 

STEP 4:

Drain potatoes and cauliflower florets—setting aside one cup of boiled liquid. 

STEP 5:

Return potatoes and cauliflower florets to pot, add extra virgin olive oil, and use a potato masher to combine everything.

STEP 6:

Add the set-aside cup of boiled liquid and continue mashing until reaching your preferred texture.

STEP 7:

Serve garnished with fresh parsley and black pepper, if desired. 

Ingredients:

  • 2 lbs potatoes (washed and unpeeled, cut into two-inch pieces)
    May improve blood sugar control 

  • 4 cups cauliflower florets

    Enhances weight loss and digestion

  • 2 cups vegetable broth

Contains Vitamin A, which helps improve vision 

  • Salt (to taste)  

Necessary—in small amounts—for nerve and muscle function

  • 1 rosemary sprig

Boosts immune system 

  • 4 tbsp extra virgin olive oil 

An ideal healthy fat

  • Fresh parsley (optional)  

Supports heart, kidney, and bone health 

  • Black pepper (optional)  

Enhances digestion
