Recipe: Blueberry Coconut Smoothie
With winter a thing of the past, spring has me craving berries of all kinds. Luckily, this blueberry coconut smoothie does the trick every time. It’s the perfect balance of flavor and nutrition—providing fiber and omega-3 fatty acids that will keep your glucose level stable.
Ingredients:
½ –1 cup frozen wild blueberries
Wild blueberries have a higher antioxidant count
1 tbsp flax seeds
1 tbsp chia seeds
1 cup kale, spinach, chard, or dark leafy greens (fresh or frozen)
15–30 g protein or all-in-one powder

6 oz water
6 oz coconut milk
Directions:
Step 1:
Combine all ingredients in a blender.
Step 2:
Blend until completely smooth.
Step 3:
Pour and enjoy!
