Recipe: Spicy Spinach Soup

When we heard March 25 was International Spinach Day, we immediately gathered the ingredients for one of our favorite dishes—spicy spinach soup, adapted from Kitchen at Hoskins’ original recipe. The blend is so tasty you can eat it as actual soup, sip it like tea, or down it cold. Ready to give it a try?

Ingredients: 

  • Fresh baby spinach 

  • Raw, whole cashews 

  • Cumin seeds 

  • Chicken stock 

  • Coriander powder 

  • Cayenne pepper powder

  • Turmeric powder 

  • Onion, finely chopped 

  • Garlic, minced 

  • Olive oil 

  • Salt

 
 

Directions:

Step 1: 

Toast cumin seeds in olive oil. 

Step 2: 

Add cashews, onion, and garlic and saute until translucent. 

Step 3: 

Add spinach, coriander powder, cayenne pepper powder, and turmeric powder. Saute until spinach is wilted and spices are toasted.

Step 4:

Stir in chicken stock and a touch of salt, then bring to a boil. Allow it to boil no longer than one minute. 

Step 5:

Let cool for a few minutes and blend until smooth.
